Ontario suffers through heat wave.
Coming up with new ideas for healthy dinner options can be tricky. Taco night is a favourite, it is fast and it can be jammed packed with veggies and lentils instead of beef.
I like the kids to prepare dinner at least once a week. If you are looking to get the kids cooking in the kitchen, this is a great starter.
Use your traditional taco seasoning and or kit. Swap out the beef for 2 cans of lentils, drained and washed. I love avacado oil with the lentils but you can use olive oil as well. Heat up 2 tablespoons, add in ¼ cup onions, diced, cook for a couple of minutes,
add in the lentils and your taco mix.
You will need to add in some water here just to keep it moist. Cook just until the lentils are heated and you are good to go..
The big change to this, is to swap out the beef for lentils and the kids will still love it!
For your toppings- I have the kids prepare this before hand.
Chopped up peppers (any colour) I love peppers so we always have them washed and sliced in the fridge so it is easy for the kids to cut up into smaller slices, Iceburg lettuce, grated cheese, and diced tomatoes (You can use a jar of salsa instead, or both)
Guacamole: 2 avocados – peeled, pitted, and mashed. A couple slices of fresh lime, squeeze the juice in, 1 teaspoon salt
1 teaspoon minced garlic
